The title page advertises the work as a “novísimo manual práctico de cocina española, francesa, inglesa y mexicana, higiene y economía doméstica,” containing “más de 2,000 fórmulas de ejecución sencilla y fácil.” Its pages map an encyclopedic range of topics: pastry and confectionery; tamales, adobos, and festival dishes; French and Spanish sauces adapted to Mexican kitchens; secretos de tocador; and an extensive home-medicine section typical of Mexican household manuals of the era. For Puebla’s mole tradition in particular, La Cocinera Poblana is deeply significant: it codified domestic variations of mole poblano, pipianes, adobos, antojitos, and other dishes that blend Indigenous Nahua techniques with colonial monastic influences. Boards frayed along edges and spine, binding semi-fragile but sound. Faint marks to title page, else clean. Overall good condition.
